Lulu’s barbecue sauce

I developed this BBQ Sauce just for Pulled Beef Sandwiches and during the development stage I needed someone to help stir the sauce so it wouldn’t burn. I told my daughter Lulu that if she helped me make the sauce, I’d name it after her. I made this sauce thin so I could soak shredded beef in it but it can reduced at a low heat to a desired thickness. It’s a more tangy than sweet sauce but the balance of sweet, tang and heat from the chipotle adobo sauce, is perfect for pulled beef sandwiches, enjoy!

Lulu’s Barbecue Sauce
1 Small Onion coarsely chopped
2 Clove of Garlic (chopped)
1 Small Can of chipotle peppers in adobo sauce, USE THE SAUCE ONLY (about 3 tablespoons)
1 ½ Cups Vegetable Broth divided (Or water to thin)
½ tsp. Fresh Ground Pepper
½ tsp. Kosher Salt
1 Tbsp. Olive Oil
½ cup of Dark Molasses
1/4 cup Dark Brown Sugar
1 cup of Ketchup
¼ cup of Apple Cider Vinegar
¼ cup of Dijon mustard
2 Tbsp. Worcestershire Sauce
Place Onion, Garlic, Adobo Sauce and a ½ Cup of the Broth, Salt and Pepper in a blender and purée until smooth, then in a Medium Sauce Pan, heat Olive Oil for one minute over medium high heat and sauté the purée mixture for 3 minute, stirring often. Whisk in remaining ingredients to saucepan and bring to a simmer, then lower the heat to low and simmer for 15 to 20 min, stirring often. Let cool and serve…
