1 large clove of garlic smashed in a bowl with a pinch of kosher salt
2- large ripe tomatoes or (1 pint heirloom tomatoes) diced
The juice of 2 small lemons
3-4 medium cucumbers diced
1/2 sweet yellow onion or red onion chopped
1 -2 celery stalks diced
1/2 red and orange bell pepper diced
1-2 diced radishes
1 tsp kosher salt,
1/2 tsp fresh cracked pepper
1/2 tsp hot pepper flakes
6 tablespoons chopped fresh mint leaves
6 to 8 tablespoons extra-virgin olive oil, to taste
